TL;DR — Colour is not permanent. Chilli powder lightens over time (faster after sterilisation); sweet paprika can darken after sterilisation. Both are normal pigment chemistry. Cool, dry, dark storage and moisture control keep colour stable longest.
Why Colour Changes¶
Paprika and chilli get their red colour from carotenoid pigments, which are sensitive to light, heat and oxygen. Two changes matter most in practice:

Neither change means the product is spoiled — they are normal pigment behaviour. But they matter for a buyer, because the colour your product ships with is not the colour it will show after months on a shelf.
The Two Directions Explained¶
- Chilli powder fades — the red carotenoids oxidise and break down, so the powder loses colour depth over time. High-temperature sterilisation accelerates this visibly, because heat speeds pigment degradation.
- Sweet paprika darkens — the higher sugar content in sweet pepper varieties browns under heat (Maillard-type reactions), shifting the powder darker rather than lighter.
This is why two powders can behave oppositely under the same sterilisation step — a distinction worth knowing when you specify a colour target. How to Store for Stable Colour¶
Four conditions, in order of importance:
- Cool — avoid heat; high temperature accelerates colour loss
- Dry — keep moisture under 13%; moisture drives both degradation and microbial risk
- Dark — light breaks down carotenoids; store away from direct light
- Sealed — limit oxygen exposure, which drives oxidation

When Sterilisation Is Required¶
